Snoek with Coriander and Baby Spinach Sauce

1 Medium Snoek
(I used a medium size slightly smoked snoek. If you can’t find snoek, this recipe will work with Angel Fish, Dorado or any white game fish)
Sauce:
1 Cup Olive Oil
1 Clove of Garlic
Juice from 1 Lemon
1 tablespoon Dijon Mustard
1 cup coriander leaf
1 cup baby spinach
1/2 cup grated parmesan cheese
1/2 teaspoon salt
Basting for snoek:
75 grams salted butter (melted)
juice of 1 small lemon
2 tablespoons of the coriander and baby spinach sauce
Method:
Pre heat the oven to 230 Degrees Celsius
Place the snoek skin side down on a baking tray lined with foil sprayed with Spray ‘n Cook.
Baste the fish with the butter and lemon mixture and cook for approximately 15 min. Note that this will vary according to the size of the fish and your oven. You can grill the fish but you will need to keep an eye on it to ensure that the fish is not overcooked.
Add all the ingredients for the sauce in a food processor and blitz until all the ingredients are combined and all the ingredients have been finely chopped.
Once the fish is cooked, drizzle the sauce over the fish and garnish as you like.
Serve with garlic bread or a side of your choice.
